The story
freustil in Ostseebad Binz serves a Nordic kitchen at Zeppelinstraße 8, inside the Hotel Vier Jahreszeiten. The Michelin Guide awarded it one star in 2026 for high-quality cooking.
Ralf Haug runs the kitchen and works with regional ingredients, cooked in a contemporary way. The Feinschmecker describes his approach as recombining northern produce in fresh combinations that keep the same creative streak. The menu changes with the season, so the dishes you find in one visit may differ from the next.
Recent courses have included savoy cabbage with onion and parmesan, scallops with pumpernickel and kohlrabi, and fjord trout with potato and chives. Guests can choose a six-course Surprix menu for 88 euros or the full freustil menu for 128 euros. A vegetarian version is available on request.
The dining room has floor-to-ceiling windows and natural wooden tables. Schlemmer Atlas rates it 3,5 Kochlöffel for its cozy modern Scandinavian style and relaxed atmosphere. The wine list offers around 120 selections, with 15 available by the glass.
