The story
Baron.ess sits at Am Mühläcker in Sonderhofen (97255), near Ochsenfurt, and serves seasonal Franconian cooking in the fine dining room of the Brückenbaron estate. Der Feinschmecker gave it a 3 rating in 2026, and the Michelin Guide lists it as Recommended for the same year.
The menu runs to five or eight courses. Head chef A. Gläsel's kitchen forages its own wild carrots, then serves them in yogurt and grilled, with a pesto made from their greens, marinated chamomile blossoms and rowan berry sauce. The char is marinated in miso, torched and set in a duckweed broth. Salt, acidity and the creamy fat of the fish pull against each other in that dish.
The dining room occupies an old steel bridge that was moved from the Main River into the fields of the Ochsenfurter Gau. Light floods in through the day, and the view runs out over an artificial lake landscape. A terrace extends the room outdoors. Baron.ess is the fine dining part of a larger estate that also has a Franconian à la carte restaurant and a Sunday brunch from October to April.
The Schlemmer Atlas awarded its GreenSpoon in 2026. Vegetables, herbs and fruit grow on the grounds, the eggs come from their own chickens and the fish from their own breeding. The wine list stays close to home, with Franconian bottles and a number of natural and orange wines.
