The story
Essigbrätlein holds two Michelin stars (2026) for its vegetable-driven cooking at Weinmarkt 3 in Nuremberg. The fine dining kitchen works in a narrow half-timbered house in the old town, and its regional German approach puts produce ahead of luxury ingredients.
Yves Ollech and Andree Köthe have shared the kitchen leadership since 1997. In 2008 the restaurant dropped classic haute cuisine staples such as foie gras to concentrate on vegetables. Der Feinschmecker gave it 4.5 points in 2026, describing a menu of four to seven courses where vegetables are the protagonists and meat or fish appear only when they serve a purpose.
The guiding idea is that everything is used and nothing wasted. Celery, leeks and Jerusalem artichokes are cooked gently and seasoned in a concentrated way, so courses move through earth, herbs, fermentation, bitterness and freshness. The beetroot with caraway caramel, developed in 1999, remains a signature dish. A vegetarian evening menu runs alongside the main one.
Ivan Jakir has looked after guests and advised on wine as sommelier since 1999. The list leans toward natural wines, mature Rieslings and oxidative styles chosen to sit alongside the food. Inside, wood, stone and soft lighting give the rustic yet elegant dining room a calm, focused feel.
