The story
Entenstuben at Schranke 9 in Nürnberg is a French kitchen that holds one Michelin star (2026) for high quality cooking. The modern French menus are built around seasonal produce, and the restaurant sits in the Wöhrd district, a short walk from the Hauptbahnhof.
Fabian Denninger is the chef and owner. Guests decide at the table how many courses they want, starting at four and reaching seven, which the restaurant calls flexible fine dining. Each menu comes in a vegetarian and an omnivore version. Wine is Denninger's second language, shaped by a childhood in Franconian viticulture.
The winter menu, valid until 20 March 2026, opened with pickled beetroot with kefir and hazelnut, paired with smoked sturgeon. A later course combined braised leek with potato and beurre blanc, served with Norwegian skrei. Seared scallop with rutabaga, apple and caper salad shows the fruity sweet and sour accents Denninger favours, and the Schlemmer Atlas rates the restaurant 3.5 Kochlöffel for its focus on fish.
The dining room seats 30 and has a calm, elegant feel, with a summer terrace. The wine list holds just over 400 European bottles, with a focus on Germany and Austria. Upcoming events include a Good Friday fish dinner on 3 April 2026 and a champagne dinner on 30 April 2026.
