The story

Torkel in Nonnenhorn: Mediterranean Fine Dining on Lake Constance

Torkel, at Seehalde 14 in Nonnenhorn, runs a Mediterranean kitchen beside Lake Constance and earned 16 points from Gault&Millau in 2026. The restaurant belongs to a family-run hotel with a spa, and the Stoppel family has kept it going since 1927.

Lake fish and organic produce

Chef Alexander Stoppel cooks seasonally and favors regional, organic ingredients. Vegetables come from his brother's organic farm, and the fish is caught in the Bodensee. The Schlemmer Atlas gave Torkel 3 Kochlöffel in 2026, pointing to its four-course menu, fine lake fish and venison ragout with spätzle.

The fine dining menu

The current tasting menu opens with blue fin tuna, beetroot and horseradish, then moves to duck gyoza in dashi. Steamed wild trout with lentils and guanciale comes next, followed by a pepper-crusted Bioland fillet steak with port. Chocolate mousse with coffee sorbet closes the meal. Four courses cost 110 €, five cost 129 €, and the sommelier Bernhard offers matching wines for 49 or 59 €.

Winter garden and vineyard

Meals are usually served in the winter garden, which looks over the Herawingert vineyard. The vineyard and Torkel both belong to the Princely House of Liechtenstein, so the princely court winery is a natural choice from the wine list. Guests staying overnight can also use the hotel's rooms and small spa.

Rather than attempting to carve out a niche with vegetarian dishes, Ivo Berger remains faithful to his core competency: meat and fish cuisine. He already showcased his culinary skill with an amuse-bouche of venison fillet with cream-leek sauce and bacon-wrapped dates, and the lightly cured, lukewarm Swedish reindeer meat with celery and bergamot was an outstanding starter. The main course delivered a flawlessly cooked Canadian bison steak, prepared precisely by eye. The fish offerings also impressed, featuring robustly grilled turbot fillets resting on a thickened lobster bisque atop an artichoke base. The classic dishes on the menu remain a solid choice: such as the freshly tossed salad, or the rich yet elegant Pommery mustard soup served with a scallop and carrot vinaigrette. Finally, the dessert menu features perennial hits alongside occasional discoveries. Take, for instance, the legendary "Rolf's Iced Coffee" or the lukewarm baked apple slices served with vanilla ice cream and pineapple. Meals are typically enjoyed in the winter garden, overlooking the "Herawingert" vineyard, which, like the "Torkel," belongs to the Princely House of Liechtenstein. It only makes sense to order a bottle from the princely court winery. Alternatively, guests can peruse the extensive wine list for another premium cru.
