The story
Buchner Welchenberg 1658 sits at Freymannstraße 15 in Niederwinkling, Germany, where French cooking has earned one Michelin star (2026). The restaurant works within a 16th-century estate that the Buchner family has owned since 1882, and its classic French kitchen shares the house with a hotel and a country inn.
Mathias Achatz leads the kitchen as chef de cuisine. His dishes start from French technique and draw on Japanese and Bavarian influences, according to the restaurant. Most ingredients come from small local farms, and the menu shifts with the season.
Recent reviews describe sea bream with radish, rice and a baked oyster, and venison loin with salsify, apple and mustard jus. A sea bass dish pairs pumpkin and couscous with a curry beurre blanc. The current printed menu includes Scottish salmon with beetroot and wasabi, and Skrei cod with blood sausage and zucchini. Dessert might be white chocolate with carrot and vanilla.
The dining room keeps its old wooden character but has been updated to contemporary standards, with tables spaced generously apart. Up to 80 guests can be seated, and the open kitchen lets diners watch the plates come together. The wine list offers more than 120 bottles. Schlemmer Atlas rates the house 3.5 Kochlöffel, citing its centuries-old tavern tradition.
