The story
Pankratz sits at Lindenplatz 6 in Mainz, where the Pankratiushof estate runs a seasonal regional kitchen in a converted barn. Der Feinschmecker awarded it 2.5 in 2026, and the restaurant's fire-led cooking and daily-changing menu show why.
The open fireplace is the heart of the room, and the kitchen grills and smokes there. Vegetables come from the estate's own fields and from a family in Ginsheim, and the sourdough is baked in the Pankratiushof bakery. Dairy is made in the small estate dairy, while meat is matured by local farmers.
The tasting menu runs to 14 small courses built on the best products of the region. The kitchen decides what to cook each morning, based on the harvest, ripeness and season, so the menu follows the market. A vegetarian version is available, and guests can add a wine or non-alcoholic pairing. The wine list favors bottles chosen by hand and made with minimal intervention, and the non-alcoholic drinks are produced in-house.
Breakfast arrives as many small plates of artisan specialties from the estate's manufactory and bakery, and anything that runs out can be reordered. The Bistro serves an à la carte menu of bistro and Pankratz classics, with a more relaxed pace for families. The room is spare, with bare wooden tables and an open kitchen.
