The story
Zum Hirsch, at Hauptstraße 23 in Königsbach-Stein, runs a Badische kitchen with French roots and was awarded 2.5 Kochlöffel by the Schlemmer Atlas in 2026. The house is a half-timbered building dating from 1688, set between Karlsruhe and Pforzheim, and its menu is served as a set menu or à la carte.
The set menus change with the seasons and run from three to five courses, priced at 81, 101 and 119 euros. A spring menu has baked scallop with green apple and dill yoghurt foam, and grilled lake trout in a Bouchot mussel and saffron broth. Veal appears in several guises, including a Black Forest veal fillet with crisp veal sweetbread and veal shank ravioli. Michelin lists the restaurant as Recommended for 2026.
Lunch from Tuesday to Friday, excluding public holidays, is the Eat & Talk menu at 45 euros. Its starters include beef consommé with a small liver dumpling and Maultaschen, and homemade linguine carbonara with crisp guanciale. Beef stroganoff with gherkins and mushrooms and pappardelle with braised pulled beef are among the main courses. The evening à la carte card also lists dry-aged roast beef with oxtail ravioli.
Filled profiteroles with Piedmontese hazelnut cream, salted caramel and Williams pear sorbet close the set menus. Alternatively, a raw-milk cheese from the affineur Waltmann in Erlangen comes with caramelised nuts, fig mustard and fresh grapes.
