The story
Kuultivo, at Könneritzstraße 24 in Leipzig, is a modern French restaurant that earned one Michelin star in 2026. The kitchen works from a menu that changes with the seasons, and the cooking is built on a small number of carefully chosen ingredients.
Chef Klaus Schunack's kitchen favors local producers and sustainable goods wherever possible. The menu changes often and follows the calendar rather than trends. Familiar ingredients appear in unexpected pairings, which is where much of the character lies.
Dinner opens with house-baked sourdough and butter. The courses on the published menu include mussel with apple and quince, tortellini with Jerusalem artichoke and mushroom, and pumpkin with seaweed and vanilla. Later courses feature halibut with radish and walnut, duck with cabbage and cranberry, and blood orange with olive and chocolate. Vegetarian guests receive salsify in place of mussel, kohlrabi in place of halibut, and beetroot in place of duck.
The restaurant seats around 30 guests in a compact room with high ceilings, light furniture, mirrors and a wraparound leather bench. Blue chairs add contrast. The open kitchen overlooks the bar, so guests can watch the team at work. The concept is deliberately relaxed, with no formal dress code expected.
