The story
Schwitzer's Gourmet-Restaurant sits at Etzenroter Straße 4 in Waldbronn, near Karlsruhe, where a French-leaning kitchen earned one Michelin star in 2026. The restaurant belongs to the Schwitzer's hotel by the Kurpark, and its menus are built on seasonal produce.
Cédric Schwitzer, who comes from Lorraine, leads the kitchen. Each course arrives with a "boarding pass" card showing a color photograph of the plate and a diagram of its construction. Menus run four or six courses, in both vegetarian and omnivore versions.
The four mises-en-bouche come in a sphere of four horizontal layers. One example is overripe tomato dried into a crisp chip and filled with confit tomato cream, served alongside hare with elderberry and pistachio. The tasting menu opens with a herb oyster mushroom cream that suggests foie gras, and it closes with Valrhona Caramélia chocolate scented with orange and cardamom, followed by petits fours.
The dining room has just four tables and a Chef's Table for up to six guests, with a living-room feel. The wine list leans toward France, and the house holds regular wine tastings. In warmer months, the terrace looks out over the treetops.
