The story
Vince Ristorante sits at An der Börse 4 in Hannover, serving Italian cooking in a former bank building. Schlemmer Atlas gave it 2 Kochlöffel in 2026, describing a simple room with the feel of a wine shop and Italian dishes prepared fresh each day.
Chef Deniel Nicolas Haas leads the kitchen, and kitchen director Marcel Elbruda oversees the house creations. The menu changes several times a season, with new dishes most weeks. Truffle runs through the Italian menu, from tagliolini with Italian truffle to carpaccio with pine nuts and parmesan. Lamb rack, black Angus fillet and cod appear among the mains.
Guests dine beside safe deposit boxes and a real bank vault door. A walk-in wine cabinet holds more than two thousand bottles at a steady temperature. The private dining room has the T1 kitchen block, a bronze and brass counter designed by Roland Trettl, and its windows dim to any level of transparency.
