The story
Zipang is a Japanese restaurant at Eppendorfer Weg 171 in Hamburg, and it earned a Michelin Recommended listing for 2026. The menu pairs traditional Japanese dishes with techniques and ingredients from Western cooking, so the room feels both familiar and distinct.
Toshiharu Minami has worked in restaurants for more than 35 years. He first trained for several years in Japan, then moved to Germany and refined his cooking in several well-known kitchens. His Japanese cooking goes well beyond sushi, with creative plating and dishes that change with the season.
The seasonal menu runs six or eight courses, priced between 88 and 108 euros. A wine pairing of seven glasses costs 68 euros and includes Champagne, sake and two Japanese wines. Courses can also be ordered individually from the à la carte list, which includes miso soup, agedashi tofu, teriyaki salmon and tempura.
At lunch, the kitchen serves a teishoku set and a changing weekly offer, which keeps the midday menu fresh. The Schlemmer Atlas awarded Zipang 2.5 Kochlöffel for 2026 and singled out its rotating lunch specials.
