The story
HENSSLER in Hamburg is a sushi-led Japanese and Asian fusion restaurant at Große Elbstraße 160, 22767 Hamburg, and it holds a Michelin Recommended distinction for 2026. The restaurant sits in the Altona fish market area, where its sushi bar and open kitchen have made it a fixture for diners who want fresh fish cooked with a modern hand.
Toni Henssler has led the kitchen since 2023. He trained at Grashoffs Bistro in Bremen and later worked at the Munich star restaurant Tantris. The menu follows the family's approach: classic Japanese sushi creations alongside international techniques, prepared in a modern and relaxed way. Seafood comes from suppliers the family knows well, and deliveries are checked every day.
Schlemmer Atlas describes the format as a lively sushi bar where guests can order freely from tempura, tuna tartare, and salmon fillet teriyaki style, or choose a set menu. Lunch and dinner menus, a dessert card and sushi to go round out the offering. Vegetarian dishes are also listed among the restaurant's options.
The restaurant occupies a former production hall, designed with architect Udo Strack and designer Peter Schmidt to read as industrial and urban. Inside there are seats for 140 guests, and in summer 60 more places open on the terrace. A 20-metre open kitchen lets guests watch the cooks at work. Groups of ten or more are served a set menu planned with the chef.
