The story
Gasthaus zur Post is a North German restaurant in Cranz, Hamburg, at Estdeich 88, where the kitchen centres on fish from the Elbe and the North Sea. The Schlemmer Atlas awarded it 1,5 Kochlöffel in 2026, recognising a traditional inn that the same family has run for seven generations.
Christian Rindfleisch has led the kitchen since 2022, when he succeeded Heino Grube, who retired after forty years. Rindfleisch grew up on Rügen in a fishing family. Much of the produce comes from regional suppliers in Hamburg and the Altes Land. When the catch runs short, the chef sometimes takes his own boat to the cutter to collect fish.
The menu changes with the year. Elbe stint arrives in winter, fried crisp and served with potatoes and a sharp onion dip. Asparagus follows in April, and new matjes appear from June. Summer brings chanterelles, while half a roast duck returns each autumn with red cabbage and croquettes. The house plaice, served Finkenwerder style with bacon or Blankenese style with North Sea shrimp, comes with two fish per portion.
