The story
Ratsstuben, at Mühlenstraße 3 in Haltern am See, holds one Michelin star for 2026, awarded for high quality cooking. Chef Daniel Georgiev runs a modern French-leaning kitchen with Asian and international touches.
French classics are the foundation of Georgiev's style, interpreted in a contemporary way. Inspiration from Germany and the rest of Europe finds its place alongside them. He has cooked here with a Michelin star every year since 2017. From Tuesday to Thursday, a four-course Surprise Menu is offered at a more affordable price.
In autumn, venison loin from the Müritz region arrives with pear, pepper, red cabbage and dumplings. Chestnuts and hazelnuts turn up beside goose liver and truffle. Caviar, served generously, tops a composition of smoked eel, cream cheese and potato. A recent menu also lists Wipperfürth trout tartare, sautéed morels, loup de mer and lamb rack with artichokes and polenta.
Sommelier Yasin Aktas draws on an international list of more than 300 wines, and a wine pairing is available. A glass, walk-in climate-controlled wine cabinet stands out in the dining room. The restaurant sits inside the Ratshotel (open since 1811), about 100 meters from Haltern's market square. Service is attentive and the mood relaxed.
