The story
Villa Busch, at Westerwaldstraße 4 in Haiger, is a Mediterranean and International restaurant that earned a Michelin Recommended listing for 2026. The kitchen works in a late 19th-century villa, and the menu moves from hearty German classics to more refined gourmet dishes.
Owner Ralf Dörr describes the cooking as creative and innovative, built on regional, high-quality ingredients. The house states more than 30 years of experience in the restaurant trade. The Schlemmer Atlas awards it 2.5 Kochlöffel for 2026.
The current à la carte lists 24-hour cooked pork belly with grilled octopus on teriyaki vegetables, and Black Angus beef tenderloin medallions with truffle flavours, peas and carrots, and butter mashed potatoes. Pasta in herb cream comes with shaved truffle, an organic Langenaubach egg and Grana Padano. A vegetarian plate of beetroot and pumpkin with wild broccoli is also offered. The Schlemmer Atlas entry highlights crustacean soup and duck breast.
The building has spacious grounds and ornate plaster ceilings, with outdoor seating and a private room available. Ralf's Kochschule runs themed courses, from Mediterranean and Asian cooking to vegan and vegetarian menus. The wine list holds around 120 bottles from around the world.
