The story
Wirtshaus zum Schweinsbräu in Glonn serves Bavarian country cooking at Herrmannsdorf 7, and the Michelin Guide listed it as Recommended in 2026. The kitchen works with produce from the farm around it.
Olimpia Cario has worked in hospitality since 1993 and has led the Wirtshaus since autumn 2024. She cooks alone, by conviction, and builds her dishes around the farm and the season. She wears tailored dresses instead of chef's whites, made for her by Jenni B. in Parma. Twice a year a fashion show takes place in the dining room.
The Schweinebraten is cooked for 12 hours at low temperature and served with crust, bread dumpling and cabbage salad. The pork Wiener schnitzel comes with potato salad and a cranberry-lemon gelée. Starters run from pikeperch ceviche with pea emulsion to a baked egg with truffled potato cream. On Saturdays from 18:00, a five-course surprise menu is served by reservation. For dessert, the caramelized Kaiserschmarrn with plum compote is made for two.
The restaurant sits within the Herrmannsdorfer Landwerkstätten. From the table you can see the bakery, and the butchery and cheese dairy are directly below. Artworks from the Karl Ludwig Schweisfurth collection hang in the dining room. The Schlemmer Atlas gave it 2 Kochlöffel in 2026, noting the lovingly renovated farmstead and its timber beam construction. A private room is available for groups.
