The story
Die Krone, at Hauptstraße 44 in Sulzbach-Laufen near Gerabronn, cooks a Swabian kitchen with Mediterranean touches and holds the Michelin Bib Gourmand (2026) for good quality, good value cooking. The hotel restaurant sits on the Kocher Valley's edge, where traditional home cooking meets lighter southern influences.
Markus Elison, the chef, reworks established classics in a modern way. The kitchen avoids convenience products. Sauces and stocks are refined over several days until the flavours develop. The team describes this patience as the core of their work.
Game and winter produce feature prominently. A dashi made with Sulzbach roe deer comes with root vegetables, wonton and egg yolk. Roast venison saddle arrives in a juniper and lingonberry cream with savoy cabbage and Knöpfle. Veal loin is served with bries and winter truffle over Acquerello risotto. For the traditional side, the Swabian Zwiebelrostbraten is served in a Spätburgunder jus with Spätzle.
The Krone Stüble is the more relaxed room, with plain Swabian dishes served in a homely setting. In summer, a beer garden beside the Eisbach offers a quieter place to sit outdoors. The breakfast buffet uses regional ingredients, from eggs and cured salmon to house-made cake.
