Ursprung is a contemporary French restaurant at Am Mittelburgwall 2-8 in Friedrichstadt, Germany, and the Schlemmer Atlas awarded it 3 Kochlöffel for 2026. The dining room belongs to the Hotel Aquarium, in the centre of the town.
Head chef and owner Jan Boddenberg runs the kitchen. The fine evening menu includes fjord trout, beef tenderloin and cod. A set lunch menu is also offered, so the room works for both midday and evening visits.
