The story
Rössle in Elzach cooks Badische country food at Hauptstraße 19, 79215 Elzach, and holds a Michelin Bib Gourmand for 2026 for good-quality, good-value cooking. The inn has been run by the same family for four generations.
Kristin and Manuel run the Gasthaus in the classic inn style, building the menu around seasonal dishes and regional ingredients. Beef roulade and Tafelspitz sit beside French bouillabaisse and a hot, spicy Thai curry soup. Local hunters supply venison from early May to the end of January, and the game dishes follow that season.
The Schlemmer Atlas notes that liver, tongue and small meat patties remain traditions here. Vegetarians can order truffle pasta or alpine cheese dumplings, and meat eaters can choose crispy duck breast. Once a month the kitchen crew cooks a seven-course menu live in the cooking school, at tables of up to 14 guests, with wines from the cellar.
The hotel opened in 2018 with 11 rooms, nine doubles and two singles, decorated with Black Forest touches. Breakfast receives the same care as dinner, with house-made jams, cereals from the local town mill and sourdough bread baked in-house. The house also runs a cooking school and a catering service for family celebrations.
