The story
Staderer Restaurant at Franz-Xaver-Platz 1 in Eichstätt is a fine dining room with a French accent, set inside the design hotel Das Altmühltal. The Schlemmer Atlas awarded it 4 Kochlöffel in 2026.
Chef Benjamin Schöneich and his team cook from a classic French foundation and add international influences and seasonal finds from the Altmühltal. The restaurant reports a Michelin star for 2026. The hotel it belongs to opened in 2020 and has 90 rooms.
The current menu runs to five courses at 179 €. It starts with picked crab, pea, lemon verbena and yuzu sake, then moves to Breton turbot with morel and vin jaune. Limousin lamb comes off a charcoal grill. Dessert pairs rhubarb and sorrel with miso nut butter. Vegetarian requests and intolerances are handled if you tell the team before your visit.
The list has more than 500 positions. Its core is mature white wines, German Spätburgunder and aged Bordeaux. Rarities still resting in the cellar can be reserved and prepared ahead of your visit on request.
