The story
Staudi's at Münsterstraße 115 in Düsseldorf cooks contemporary, seasonal tasting menus, and the Schlemmer Atlas awarded it 3 Kochlöffel in 2026. The restaurant sits north of the city center in a listed former butcher shop.
Sebastian Staudinger, born in Düsseldorf, taught himself to cook. In Melbourne he asked to see the kitchen of a restaurant he loved and stayed five months. He opened Staudi's in 2020 with his wife Magda, first as an à la carte room with modern German food. The tasting menu grew from three courses to five and became the center of the house. Michelin lists the restaurant as Recommended for 2026.
The current "Moderne Kreationen" menu starts with flamed mackerel, leek emulsion, radish and trout roe. Confit sturgeon with umami glaze and fermented apple follows, then short ribs from the hibachi grill with a forest mushroom ferment. Candied ginger ice cream with apple sorbet closes it. Five courses cost 105 euros, six cost 125.
The vegetarian "Grüner Genuss" menu is its own sequence, with burnt leek, confit kohlrabi and baked beech mushrooms. It costs 85 euros for five courses and 95 for six.
The old butcher shop left an Art Nouveau glass ceiling, hand-painted floor tiles and original meat hooks. Magda Staudinger added handmade details such as knife rests and gold-trimmed serving trays. Private dining is available for groups of up to 42.
