The story
Ehemalige Sparkasse is a contemporary Franconian restaurant in Dinkelsbühl, at Schrannengasse 1 in the old town. The Michelin Guide awarded it a Bib Gourmand for 2026 for good-quality cooking at good value, and the Schlemmer Atlas gave it two Kochlöffel the same year.
Florian Kellerbauer leads the kitchen, which cooks fresh, home-style regional food. The team sources from regional growers it works with closely. Kellerbauer also runs a second restaurant in the hotel's main building on Weinmarkt, around the corner.
The Franconian classics anchor the menu: Zwiebelrostbraten with house-made Schupfnudeln, Sauerbraten with red cabbage and potato dumplings, and carp from the Dinkelsbühler Spiegelkarpfen section, prepared in beer batter, Frankenriesling or blue. Fish dishes include Zander with tagliatelle and beurre blanc, and Skrei with potato ragout and pear. Vegetarians can order an open vegetable lasagne or Römische Nocken with brown butter.
The building keeps its historic bones beneath a modern-purist interior. A lunch card runs daily from 11:30 to 17:30. The regular menu opens with aperitifs such as a house-made lime and basil cocktail with Blanc de Noir sparkling wine, along with a non-alcoholic spritz made with pear, sage and verjus.
