The story
BjörnsOx is a World Cuisine restaurant at Bahnhofstraße 2 in Dermbach, Germany, where chef Björn Leist holds one Michelin star from 2026 for cooking rooted in the Rhön region. The dining room seats only five tables inside the SaxenHof hotel, and the evening runs as a single eight-course surprise menu.
Björn Leist trained at the Bareiss hotel in the Black Forest and later worked with Lisl Bacher in the Wachau. He cooked with Andreas Caminada at Schloss Schauenstein before returning to the Rhön, first to his family's business in Hilders and then to Dermbach in 2018. The menu is a carte blanche built around pasture-fattened ox from the Rhön, with ingredients from further afield filling out the courses. Farm-to-table has been the house approach for years.
The signature "Rhön butcher's board" arrives as a potato ring with beet puree and pork cheeks. Sauerkraut salad, sour cream and sausage broth complete the plate. Leist also makes the jams and fruit spreads served in the hotel himself.
The room has dark wooden beams and a rustic village feel, which the Schlemmer Atlas singled out with three Kochlöffel in 2026. Michelle Leist runs the floor, guides guests through the evening and suggests drinks to match each course. The wine list holds around 200 selections, with a strong focus on regional producers.
