The story
edl.eins, at Edlmairstraße 1 in Deggendorf, is a modern French restaurant that earned one Michelin star in 2026 for high-quality cooking. The kitchen builds on French technique, with Italian and Asian influences that shape its flavors and structure.
Nicolas La Rocca leads the kitchen. Each dish is built around one dominant product, with only a few precisely placed components. The menu moves from clean, focused flavors toward greater intensity over the course of the evening, and classic recipes are reworked to feel lighter and more direct.
The tasting menu has included Char with pear, bean and bacon, Saint-Pierre with nduja, fennel and finger lime, and veal cheek with N25 Oscietra caviar, tomato and basil. Beef Wellington appears as the main course. The five-course menu is priced at 174 € and the six-course at 204 €. The à la carte list offers dishes such as tuna tataki with passion fruit and avocado, and a pasta of the week.
The Schlemmer Atlas awarded edl.eins 4 Kochlöffel for its panoramic glass dining room on the ninth floor of a high-rise in the up-and-coming Die Bogen neighborhood. Its eight avant-garde courses and shuttle service fit the modern look of the space. Wine pairings are available, with a 65 € option on Wednesdays and Thursdays and fuller pairings for the five- and six-course menus. The restaurant also hosts weddings and corporate events.
