The story
OX, at Mauerstraße 6 in Darmstadt, cooks a French and Mediterranean-leaning menu and earned one Michelin star in 2026. The restaurant sits in the Martinsviertel and has run since November 2019 under brothers David and Norman Rink.
Both brothers are trained chefs and hosts, and the cooking follows the produce. Seasonal menus draw on regional growers and on ingredients from further afield. Lake Müritz zander arrives with kimchi and Kaluga caviar, while a lentil cassoulet gets fennel, capers and Taggiasca olives. Schlemmer Atlas gave the restaurant 3.5 Kochlöffel in 2026 for its stingray wings, redfish and pike-perch.
The Pure Taste menu moves from alpine char with kohlrabi, beechnuts and kaffir lime to Brittany sole with kimchi, salsify and Oscietra caviar. A Bresse duck from Miéral comes with foie gras and Sauce Albufera. The second menu, Oxalis, is built around a fermented kohlrabi course and an Acquerello risotto with algae and grapefruit. Upgrades include a cheese selection and Jamón Ibérico Bellota.
The dining room seats 24 and opens onto a Mediterranean courtyard. The decor is minimalist, and the service is friendly and precise. Wine pairings range from Burgundy and Tokaji to Mosel Riesling, and the list is built to cover both national and international regions.
