The story
Zum Adler is a contemporary restaurant at Moltkestrasse 1 in Bünde, Germany, on the town's market square. The Schlemmer Atlas awarded it 2,5 Kochlöffel in 2026, and the kitchen draws on contemporary and World Cuisine influences, with steaks and vegan dishes both on the menu.
The restaurant's history dates back to 1896, and the current building opened on 1 March 2016 after the earlier inn was replaced. The team says its meat and poultry come from animals raised in species-appropriate conditions, with free range on pasture. Fish and seafood are wild-caught. Vegetables, eggs, cheese, ham and sausage come from producers who work with biodynamic methods.
The Schlemmer Atlas describes fine steaks, a rotating menu of classic and vegan dishes, and a five-course menu. The kitchen serves an evening menu and a simpler lunch table, and it lists set lunch options alongside vegetarian choices.
Modern leather seating sets the tone inside, and the restaurant seats 50 indoors and 32 on the terrace. It hosts birthdays, weddings, company dinners and other private celebrations. The team also caters off-site, either as a plated menu or a buffet, and can bring its cooks and service to a private home.
