The story
Restaurant Stadtblick Sparrenburg in Bielefeld runs a world cuisine kitchen at Am Sparrenberg 38 a, 33602 Bielefeld, on the grounds of a castle complex above the city. The Schlemmer Atlas awarded it 2 Kochlöffel in 2026.
René Sygusch returned to his East Westphalian home after years in kitchens including Haerlin in Hamburg, The French Laundry in California, Frantzén in Stockholm and the Schwarzwaldstube at Hotel Traube Tonbach. The menu leans modern and regional, built on produce from local suppliers. Sygusch calls the Sparrenburg a personal project, and the cooking follows that thread.
The restaurant sits within the Sparrenburg, a 13th-century castle roughly a 20-minute walk from the center of Bielefeld. Dining happens above the rooftops, and the same site houses a café and daytime bar. Private celebrations, weddings and conferences are also held here.
