The story
Oukan at Ackerstraße 144 in Berlin serves vegan Japanese fine dining, and the Schlemmer Atlas awarded it 3 Kochlöffel in 2026. The kitchen works from a regularly changing tasting menu of five to eight courses, built around ingredients from its own fermentation lab.
The menu leans on fermentation, which shapes most of the plates. The house describes its aim as aromatically layered dishes that stay playful rather than academic. The Michelin Guide lists Oukan as Recommended for 2026, a sign of how the restaurant's plant-based approach has been received.
The temaki is a crisp seaweed wrap with peppery furikake, filled with fermented green tomato, cucumber melon and physalis. The shokupan is warm brioche glazed with amazake and black cumin, served with a dip of fermented figs from Brandenburg and olive oil. Dessert is a black rice koji mousse on a locust bean sponge, with sudachi marmelade and a miso and chestnut ice cream.
Guests can choose a tea or wine pairing, both curated by the house tea sommelière and wine sommelier. The drinks list includes wines from small, often organic winemakers, cocktails, and teas from Japan, China and Taiwan. The dining room is black-painted and minimalist, with clean lines, natural materials, ambient lighting and air conditioning.
