The story
Merold at Pannierstraße 24 in Berlin is a modern German kitchen that the Michelin Guide listed as Recommended in 2026. Chef Jonas Merold builds the menu around seasonal, organic produce and fermentation, with regional roots that show on the plate.
Merold opened the restaurant in 2021, after growing vegetables himself in a community garden at Alexanderplatz. The kitchen works with organic produce from Berlin and Brandenburg, and the restaurant became a Bioland partner in 2026. Miso and soy sauces are made in house, which adds depth to a menu that is mostly vegetarian.
The seven-course menu changes with the season, and a five-course version is also offered. Der Feinschmecker rated the restaurant 3 in 2026 and singled out the fried potato ice cream with potato chips and heritage apple compote, which has already become a house classic. Matjes tartare with pike roe, dill, shiso and labneh shows how the kitchen pairs northern German ingredients with techniques from Asia.
