The story
Maybach is an Italian-listed restaurant at Maybachstr. 111 in Köln, and the Schlemmer Atlas gave it 1.5 Kochlöffel in 2026. The guide points to the high ceilings of a renovated train station building and an ivy-covered beer garden on a gravel bed.
Wolfgang Grätz has run Maybach since 1998. He trained as a Küchenmeister and a butcher in Franken, then worked in the USA, Canada and Sweden before settling in Köln. His cooking joins gutbürgerlich dishes with regional influences and seasonal produce. The day menu has included saddle of lamb, the Original Vogler-Schnitzel and a fish variation. The restaurant calls this crossover cooking.
The dining rooms sit in the old administrative building of the Central-Güter-Bahnhof Köln-Gereon, where the station directors once worked. Large windows and tall rooms remain, and the furnishings are plain and modern. The beer garden is planted, and its terrace looks across the lawn of August Sander Park. For events, the house holds up to 300 guests.
The list covers Germany, Spain, France and Italy. It includes a Crémant for the aperitif, a Pfalz Riesling and a Mencia aged 12 months in American barrique.
