The story
Ambräusianum - Die Gasthausbrauerei serves Franconian and Bavarian food at Dominikanerstr. 10, 96049 Bamberg, Germany. The Schlemmer Atlas gave it one Kochlöffel in 2026, citing its polished brewing kettles, stone arches and covered courtyard. It is a working gastropub where the beer is brewed on site.
Since 2004, brewer Ambros Michael Mahr has brewed here, in the middle of the inn, so guests sit close to where the beer is made. The core range is Ambräusianum Hell, Dunkel and Bernsteinweizen. Seasonal releases include a Bock, a Doppelbock and a Sandkerwa festival beer.
The menu centers on typical Franconian cooking, with specialties that change weekly and follow the seasons. The house sits at the foot of the Kaiserdom in Bamberg's Sandstraße. The room has stone arches and a cozy covered courtyard, and the Bavarian-style dishes are hearty and home-style.
