The story
Werners Restaurant, at Schloss Eberstein 1 in Gernsbach near Baden-Baden, holds one Michelin star (2026) for a Baden-French kitchen working inside a castle that is more than 700 years old.
Bernd Werner is the name on the door, and Paul Nash runs the kitchen as head chef. Together they cook light, French-inspired haute cuisine with a Baden accent. Menus come in five or six courses, with vegetarian versions, and there is an à la carte option. Schlemmer Atlas gave the restaurant 3.5 Kochlöffel in 2026.
In autumn the venison loin arrives with Hokkaido pumpkin, beech mushrooms and cassis. The cod takes a Mediterranean turn with dried tomato, saffron, Amalfi lemon and chorizo. Vegetarians get a cannellini bean velouté finished with parmesan and black truffle.
Floor-to-ceiling windows look over the estate's own vineyard and down to the Murg. Inside, the walls are dark beige and the seating is orange, which lets the artwork stand out. The wine list runs past 500 selections, centred on France and southwestern Germany, with the castle's steep-slope wines given prominent place.
