The story

Nigrum Baden-Baden: Modern Cuisine at Schloßstraße 20 with a 2026 Michelin Recommendation

Nigrum, a modern cuisine restaurant at Schloßstraße 20 in Baden-Baden, holds a 2026 Michelin Recommended listing. The kitchen draws on French technique with Japanese and international accents, and the menu is rewritten every two weeks.

Chef and cooking style

Chef Ronald Ettl is Austrian and trained in a five-star hotel in Austria. He cooked in starred kitchens in Zurich, Munich, Cologne, Hamburg and Mallorca. He names Rino Casati, Germany's first Italian starred chef, as the strongest influence on his style.

Dishes and the room

Der Feinschmecker's review cites swordfish with beetroot and horseradish served as a panna cotta, and crispy pan-fried zander with pak choi and mussels. The Chateaubriand can be ordered for two. The room is black and gold under a rib-vaulted ceiling, with colorful designer chairs, modern art and an illuminated bar. The restaurant has only eight tables, so booking ahead matters.
