The story
Ostavals is a bistro in Saint-Palais, France, at 140 Chemin Latsagako in Ostabat-Asme, and Le Fooding listed it in 2026. Chef Anthony Orjollet runs a farmhouse bistro built on what local producers bring in, and the guide's entry credits him with a low-impact, terroir-first kitchen.
The menu changes every week, sometimes every day. Fish comes from Capbreton, beef from Saint-Gladie and vegetables from Larceveau, according to the Le Fooding entry. The kitchen can also prepare a special menu for vegetarians on request.
Orjollet previously worked at Epoq in Biarritz and Elements in Bidart before moving inland. The cooking here follows the season, and dishes adapt to whatever arrives that day.
The bar stays open continuously on opening days and works as a meeting point for guests. Its list draws on wines, beers, spirits and juices from local and regional makers, and Le Fooding counts more than 400 low-intervention wines on the wider list. The dining room sits in a light-filled outbuilding of stone, timber and glass.
