The story

Jour de Fête, Saint-Calais: Organic French Farm-Inn Kitchen in Valennes

Jour de Fête in Saint-Calais is a French farm-inn kitchen at 5-7 Place de l'Eglise, Valennes, and Le Fooding named it best village café in 2023.

Chef and cooking style

Adèle, Maud's sister, leads the kitchen as a new-wave chef who trained at Bouillon in Marseille. Oscar Raeburn, formerly of Ébauchoir in Paris, and Étienne Legrand, who came from Café du Coin, work alongside her. The menu follows what the garden and local producers supply through the seasons.

Dishes from the garden

Le Fooding's visit covered zucchini blossom tempura with yogurt and sumac mayonnaise, and a marinated eggplant and tomato salad with redcurrant and miso vinaigrette. Pea and broad bean ravioli came with faisselle and cream infused with green pepper geranium leaves. Dry-aged pork chops with new potatoes and charcutière sauce followed, and the meal closed on chocolate cake with basil ganache.

Garden, rooms and épicerie

The Jardin des Aulnes is a productive 3,500 m² garden with a 400 m² greenhouse, grown without chemical inputs in the spirit of permaculture. Guest rooms sit above the restaurant. The épicerie stocks dairy, charcuterie, Valennes honey and preserves made on site.

Major news in Valennes, a not particularly sexy commune in the Perche Sarthois region (population: 322). There’s a new restaurant/épicerie/bakery in town, dreamt up by Raphaële Yon-Araud, housed in a village building that’s been carefully renovated and equipped with a permaculture vegetable garden. Everything is therefore homemade and organic, from the vegetables, herbs and fruits pampered by his daughter Maud to the breads baked by Lucien Poujol, not to mention the terrines and sausages. And what about the grub? Adèle, Maud’s sister, is an inspired new-wave chef (ex-Bouillon in Marseille), backed up in the kitchen by Oscar Raeburn (ex-Ébauchoir in Paris) and Étienne Legrand (who came from the Café du Coin). The night we went, everything varied between very and insanely good: divine zucchini blossom tempura, yogurt and sumac mayonnaise; a stunning marinated eggplant, tomato, redcurrant salad with a miso vinaigrette; incredible pea and broad bean ravioli, with faisselle cheese and cream infused with green pepper geranium leaves; dry-aged pork chops with new potatoes and an excellent charcutière sauce; and to end the meal on a high note, a chocolate cake with basil ganache. // Ringo de Balmalon
