The story
La Bastide de Moustiers in Riez is a Mediterranean restaurant at 511 chemin de Quinson, Moustiers-Sainte-Marie, 04360, France. It holds one Michelin star for 2026, and the cooking is run by chef Valentin Fuchs under the direction of Alain Ducasse.
The menu is built on vegetables and changes weekly with what the kitchen garden and nearby farms produce. The garden covers close to 2,000 square metres. Cooks pick tomatoes, courgettes, aubergines, peas and peppers there, and they gather basil and other herbs most days. The Mediterranean cooking aims for simplicity, with technique serving the ingredient.
Fuchs, from Alsace, trained at Louis XV in Monaco and at Ômer in the Hôtel de Paris. He also worked at Byblos in Saint-Tropez and returned to Louis XV for three years. In June 2024 he took his first head chef post at Rivea Cap 3000. At La Bastide, Ducasse asked him to return to essentials, with dishes that respect the produce. The Green Guide awards it three radishes for 2026.
Meals are served on a shaded terrace under plane trees, with a view over the valley, or in one of several salons. The Asia salon has a walnut fireplace and Japanese lacquer pieces from the chef's collection. The Art Deco salon displays plates by René Lalique and Jean Luce on its walls. The smallest room, the gravure salon, seats a single table for quiet dinners.
Mathieu Bloyet, the restaurant and sommelier director, selected the wines with Bernard Neveu, chief sommelier of Maison Ducasse Paris. The list favours Provence and the rest of France, with bottles from vineyards around the world.
