The story

Bistrot École in Rians: Modern Bistro Cooking in a Former Village Schoolhouse

Bistrot École is a bistro in Rians at 2 rue des Écoles, Esparron, 83560, and the Michelin Guide listed it as Recommended in 2026. It serves modern cuisine in the old communal school of Esparron-de-Pallières.

The old classroom

The school closed in 2004, and the municipality reworked it in 2015. Alima Louange and Grégory Brousse opened the bistro here in November 2019. The façade is lavender blue. Inside, a large bar, banquettes mounted on pallets and school chairs fill the former classroom, and the shaded courtyard serves as the terrace. The bistro is the only business in a village of about 370 people.

Grégory Brousse's kitchen

Brousse previously cooked at Le Mas de Peint in the Camargue. Here the carte stays short, with four starters, three mains and four or five desserts, and it changes with the seasons, often week to week. Le Fooding, which listed the address in 2026, described a roasted eggplant salad with goat cheese vinaigrette, turbot with a clam jus, and an olive oil shortbread with preserved orange. Much of the produce comes from neighbouring farms, such as lamb from La Ferme des Bréguières. A weekday lunch with starter, main and dessert is 26 €.

Wine list

The wine list follows the same local, small-producer approach. It leans on independent growers and includes cuvées from nearby Esparron estates.

Deep in the Var backcountry, the Esparron-de-Pallières town hall had the brilliant idea of converting a former schoolhouse into a village bistro. Entrusted to Grégory Brousse (the former chef at Le Mas de Peint in Arles) and his companion Alima Louange, this beautiful building with a Provencal façade and blue shutters does more than provide various public services: a small fine food’s section, a farmer’s market, an annual wine fair… Best of all, there’s the incredible cuisine, served in the old classroom (an ornate bar, banquettes mounted on pallets, school chairs) or on the terrace in the playground. The night we went, the menu featured: a lively roasted eggplant salad, julienned peppers, pickled cauliflower and a goat cheese vinaigrette; a luminous piece of turbot cooked to perfection, with a mousseline stuffing, a slice of roasted spaghetti squash, pesto, a sun-dried tomato condiment and a moussey clam jus; before a graceful olive oil shortbread, intensified with preserved orange and covered in vanilla whipped cream. // A.S.
