The story
Pur' serves modern cuisine at 5 rue de la Paix in Paris, inside the Park Hyatt Paris-Vendôme. The Michelin Guide awarded it one star in 2026 for high-quality cooking.
Jean-François Rouquette runs the kitchen, with Ai Okabayashi as his deputy. Rouquette trained at the Hôtel de Crillon, the Grand Véfour and Taillevent before opening La Cantine des Gourmets in 2006, where he earned his first Michelin star. The menus follow market arrivals and change with the produce, drawing on terroir, the seasons and chance encounters. His French kitchen is precise and light, built on reductions, emulsions and infusions.
Naraé Kim, the restaurant's pastry chef, was named Gault&Millau Pastry Chef of the Year 2024. She joined the team in 2021 after years travelling for Hyatt and a first French post with Yannick Alléno. Her desserts focus on unprocessed, healthy ingredients, treated with a subtle touch meant to sharpen smell and taste. Her work also appears at Café Jeanne, the hotel's other restaurant.
The room was designed with artist and architect Hugo Toro, who drew every element of the table, from napkin rings to the candles that mark the start and end of dinner. A raised chef's table, connected to the kitchen, seats six guests.
