The story
Plénitude holds three Michelin stars (2026) and serves a refined International menu at 8 quai du Louvre, Paris, on the first floor of the Cheval Blanc Paris hotel. It also ranked 14th on The World's 50 Best Restaurants list in 2025, up from 18th in 2024 and 36th in 2023.
Chef Arnaud Donckele cooks with sauce as the starting point of each dish. The seven-course tasting menu might bring sardine with a piquant green Eden sauce, or langoustine with an airy sabayon. The vegetable, seafood or meat sits alongside the sauce, not the other way round. Guests take home a written account of the bouillons, consommés, sabayons and vinaigrettes, with their ingredients.
The meal is choreographed by restaurant director Alexandre Larvoir and his young team. Guests visit the cellar on arrival, and one course is taken in the kitchen. Later, diners step into a cheese cave next to the dining room to choose vintage plateware and their cheeses. Service is precise but relaxed, and staff are encouraged to bring their own personalities to the table.
Pastry chef and chocolatier Maxime Frédéric oversees the desserts, petit fours and bread selection. He won The World's Best Pastry Chef Award in 2025. The split-level dining room sits in the historic La Samaritaine building facing the Pont Neuf, and every table has a view of the Seine.
