The story

Pianovins Paris: modern bistro cooking on rue Trousseau in the 11th

Pianovins is a modern bistro at 46 rue Trousseau in Paris's 11th arrondissement, and Michelin lists it as Recommended for 2026. The kitchen works in the bistro tradition with a modern Paris approach, and the menu is built around fixed-price courses.

Cooking style

The room is small, with blonde wooden tables and grey banquettes. The restaurant's site describes a team of friends who took over the space, with a chef focused on refined flavours and a dining room led by Raphaël, who looks after guests. The current menu offers a three-course option at 35 euros and a five-course menu at 75 euros.

Standout dishes

A Le Fooding lunch review, which also lists the restaurant for 2026, described a meal of marinated sardines with lime and a touch of balsamic, duck foie gras mi-cuit with sunchoke cream and toasted hazelnuts, and a sea bream fillet with coco beans and chive oil. The reviewer closed with a plum clafoutis, and the precision of the menus stood out in that account.

Le Fooding — Listed

After providing asylum to Passerini’s Rino and Daniel Baratier’s Les Déserteurs, 46 Rue Trousseau is now housing a tiny bistro (blonde wooden tables, grey banquettes) under the leadership of seasoned chef Michel Roncière, who worked under Guy Savoy for almost 30 years. These days, hetinkers together anti-fashionable menus with an insane amount of precision, like the four-course waltz the day we went for lunch: sumptuous sardines from Saint-Gilles-Croix-de-Vie marinated in lime and dressed with a splash of balsamic vinegar and a sprinkling of mustard and beet greens; classy Vendée duck foie gras mi-cuit with a sunchoke cream and toasted Piedmont hazelnuts; a subtle sea bream fillet with coco de Paimpol beans and chive oil; before an intense plum clafoutis, which we never should have been able to finish, but did so anyways! // O.J.
