The story

Le Servan, Paris: Asian-touched French bistro in the 11th, Best bistro by Le Fooding

Le Servan is an Asian fusion bistro at 32 rue Saint-Maur in Paris 75011, where French technique meets Asian flavours on a traditional bistro menu. Le Fooding named it Best bistro in 2015, and Michelin lists it as Recommended for 2026.

Two sisters, one kitchen

The restaurant opened in 2014 and is run by two sisters of French and Filipina background. Tatiana leads the kitchen as executive chef, drawing on years at L'Astrance and L'Arpège. Katia works the floor as sommelier and general manager, with a wine list built on direct relationships with producers and natural winemakers. The sisters also run the sister restaurant Double Dragon and the wine bar Jolyne.

What arrives at the table

Recent à la carte dishes included brioche soaked in smoked chili butter and topped with raw sardines, and a large ravioli filled with spinach and egg yolk in a smoked curry butter finished with fresh herbs. Roast pork belly with crisp skin comes with tender eggplant, and a Mirabelle plum tartlet with honey ice cream closes the meal. From 2:30pm to 7:30pm, zakouskis, Russian-style hors d'oeuvres, are served as small plates.

The Levha sisters relentlessly work their magic from Monday through Sunday inside this chic bistro decked out with mouldings, a painted ceiling, a brass bar and Baumann chairs. After working at L’Astrance and L’Arpège , Tatiana now alchemizes French cuisine with occasional Asian influences, while Katia watches over the diners and their wines. Served à la carte the night we went: ultra-tender brioche imbibed with smoked chili butter and dressed with raw sardines; a delicious XXL ravioli filled with spinach and egg yolk, surrounded by a generous smoked curry butter vivified with fresh herbs; explosive roasted pork belly with perfectly crispy skin served with tender eggplant; before a Mirabelle plum tartlet with sweet honey ice cream. It’s also worth noting that the zakouskis (“hors d’oeuvres” in Russian) are available between 2:30pm and 7:30pm: blood sausage wontons with a sweet chili sauce, mussels with chili and Thai basil, marinated peppers with fromage blanc and za’atar… // D.S.
