The story
L'Atelier Saint Germain de Joël Robuchon sits at 5 rue de Montalembert in Paris, a French kitchen organized around a counter. It ranked fourth on The World's 50 Best Restaurants list in 2004.
The restaurant frames its concept as theatre. Guests face the counter and watch produce become finished plates through precise, unhurried gestures. The aim is classic French tradition, rethought with tighter rigor and cooked in plain view. A lunch menu at accessible prices carries the same modern cuisine to a wider table. The Michelin Guide lists the address as Recommended for 2026.
Chef Axel Manes was born and raised in Belgium and started working in kitchens at 13. His path ran through Comme chez soi in Brussels, Louis XV in Monte-Carlo, Paul Bocuse in Lyon and Nicolas Le Bec. Le Bec introduced him to Joël Robuchon. Manes has worked with Robuchon since 2005 and now runs this Saint-Germain Atelier.
The Menu Découverte on the restaurant's site opens with caviar and royal crab under a fine crustacean jelly and gold leaf. A chestnut velouté with truffle follows, then hot duck foie gras with green apple rolls in an hibiscus jus. Other courses include white Alba truffle with egg on crispy rice, and blue lobster grilled on the plancha with stuffed paccheri. The main course is a choice of milk-fed lamb cutlets, veal sweetbread or quail stuffed with foie gras. Dessert is an almond sorbet under mandarin foam, or the signature chocolate dessert.
