The story
L'Ami Jean is a bistronomy address at 27 rue Malar in Paris, 75007, listed as Michelin Recommended in 2026. Chef Stéphane Jégo cooks in a room that has kept the spirit of the place since the 1930s.
Jégo is Breton by birth and cooks the whole pig, from head to trotters. He describes his food as bourgeois and creative, built on preparations that often need days or weeks of maturation before they meet a piece of meat or fish. He works face to face with guests, in the middle of his brigade.
The carte follows the season. Recent starters include roast octopus with thyme and field tomatoes (24 euros), beef with carrots and apricots, the house signature (22), and the country terrine of "père Jégo" (20). Among the mains are roasted cured farm pork neck (42), pigeon roasted on the carcass (46) and a veal chop (48). A confit, grilled and smoked beef paleron with oregano (95) is made for sharing. At lunch, a business menu of starter, main and dessert is 35 euros.
The riz au lait comes from a childhood memory of his mother's version. Jégo serves it with salted butter caramel whipped cream and toasted, caramelized pecans. Wines by the glass (12 cl) run from a Madiran at 9 euros to a Marsannay at 17.
Jégo buys from farmers, fishers and hunters he has known for years, and he insists on sustainable fishing and produce free of pesticides. The Green Guide gave the restaurant 3 Radishes in 2026. The recent renovation brought matte grey tiles to the kitchen and simpler circulation, while the dining room kept its old character. The restaurant also sells takeaway dishes under the name "Jégo to go".
