The story
Frédéric Simonin, at 25 rue Bayen in Paris's 17th arrondissement, is a modern cuisine restaurant that earned one Michelin star in 2026. Chef Frédéric Simonin has run the eponymous kitchen since 2010, building seasonal menus around carefully chosen produce.
The kitchen describes its style as subtle and deliberately inventive, anchored by signature dishes that change with the season. Lunch runs Monday to Friday at 85€ for three services, while tasting menus range from a four-course Signature to an eight-course Dégustation. Dishes on the recent lunch menu included free-range hen's egg with sweet onion royale, white asparagus from the Ardennes with candied yuzu peel, and honey-glazed duck with hibiscus and smoked beetroot.
The dining room was fully redone in Terre d'Argile tones, deep earthy shades that sit quietly on the walls. The space takes its cue from a Parisian apartment, and the atmosphere is cosy and warm. The wine list mixes established growers with a younger generation of producers, and a wine pairing is offered with each menu.
