The story
Amarante is a bistro at 4 rue Biscornet in Paris (75012), and the Michelin Guide listed it as Recommended in 2026. Chef Christophe Philippe cooks here, a short walk from Bastille.
Le Fooding, which also listed Amarante in 2026, describes a bistro for meat lovers. The à la carte menu includes veal tongue sliced paper-thin with mayonnaise and mixed greens, followed by roasted veal sweetbreads with mashed potatoes. Fish eaters have options too, such as small-catch sole roasted in butter or poached monkfish with whipped butter fumet and panisse fries.
At lunch, a €29 "worker's menu" is on offer. A reviewer found monkfish blinis, then Aldudes pork shoulder slow-roasted and sautéed in butter, served with seasonal vegetables and polenta. Dessert was something between cake and French toast, with almonds and a scoop of homemade vanilla ice cream.
The decor is minimal: faux leather benches, white walls and naturalist wine posters. The restaurant's own site treats a meal a bit like a night at the theatre, so read the summary first, book ahead and arrive on time.
