The story
Alluma is an Israeli and Mediterranean restaurant at 151 rue Saint-Maur in Paris, listed as Recommended by the Michelin Guide in 2026. Chef Liran Tal and his wife Noa opened it in late 2022.
Both are from Tel Aviv. Liran cooks, having worked at Balagan and Dersou, and Noa runs the front of house. Le Fooding, which listed Alluma in 2026, describes an old Moroccan restaurant turned into a Levantine room that links North Africa and the Middle East. The kitchen builds each dish around one raw ingredient and uses as much of it as possible, which the team calls its "intelligence du déchet".
The à la carte changes with the market. Recent dishes include charcoal-grilled octopus with confit leek, chickpeas and a tahini cream spiked with Sichuan pepper, and lamb served three ways with Jerusalem artichoke cream and apricot jam. Celery cacio e pepe and crispy artichoke with labneh and schug sit among the starters. On Tuesday, Wednesday and Thursday evenings, the Carte Blanche tasting menu runs six courses for 55 euros, with a wine pairing for 39.
Waxed concrete, marble and zellige tiles give the dining room a calm, tactile look. The wine list favors independent growers working organically, biodynamically or naturally. Bottles range from France, Italy and Spain to Armenia, with island wines from Crete, Sardinia and Lipari.
