The story
Le Chantecler is a French restaurant at 37 Promenade des Anglais in Nice, holding one Michelin star (2026) and a Wine Spectator Best of Award of Excellence (2025). The dining room sits inside Hôtel Le Negresco on the seafront, and its modern French kitchen is built around the coast's produce.
Chef Virginie Basselot has led the kitchen since 2018, and she is a Meilleur Ouvrier de France. Her cooking follows the seasons and draws on local producers from the Mediterranean and the surrounding region. Deputy chefs Michelle Gibon and Amélia Losilla work alongside her in the brigade.
The room mixes historic elegance with contemporary light. Seasonal floral arrangements by Hervé Frézal stand among 18th-century works, and the tableware comes from Haviland and Bernardaud collections. In summer, the restaurant opens onto a landscaped terrace on the Promenade des Anglais. A pianist, Luc Escolano, plays during evening services.
Julien Freulon directs the dining room. Jean-Gabriel Siviragol, the chef sommelier, pairs the menu with bottles from both grand estates and smaller vineyards, and he often shares the stories behind each region and grape.
