The story
Sain is a bistro at 93 rue Maréchal Joffre in Nantes, serving modern cuisine built on produce from a family farm in Guérande. Michelin lists it as Recommended for 2026.
Samuel and Josselin Huitric grew up as sons of market farmers, and the name Sain combines their two first names. Samuel runs the front of house while Josselin cooks. Vegetables come from the organic family farm, bread from Painbar and cheeses from La Laiterie Nantaise. Everything is made in-house, the menu follows the season, and the kitchen works toward zero waste.
Le Fooding's review described a country terrine with zucchini jam and pickled onions, followed by hake with spelt, zucchini cream, beurre blanc and raspberries. A pavlova with strawberries and peas closed the meal. The bistro's épicerie corner sells vegetables, eggs, preserves, spices, coffee, tea and a selection of natural wines, so you can take some of the produce home.
