The story
La Table Mirasol is a modern cuisine restaurant at 2 boulevard Ferdinand-de-Candau in Mont-de-Marsan, and it holds one Michelin star (2026). The dining room sits within the Villa Mirasol hotel and serves lunch and dinner built around seasonal produce.
Chef Philippe Lagraula builds each menu around carefully selected ingredients and works by instinct. His style blends modern technique with respect for traditional regional dishes. One signature pairing puts Capbreton chipirons, small local squid, alongside gherkins, raspberries and peas. The aim is balance: charred squid, sharp raspberry and sweet peas, with crisp and tender textures in step with each other.
Two connected salons create a hushed, intimate setting. A large kinetic-patterned carpet designed by architect Benoît Dupuis echoes the movement in the sculpture Diane et Actéon, which stands in the room. The palette is soft and the decor restrained, so attention stays on each plate.
